About the event

Day 1: Get hands-on with the magic of salting, precision cutting, and prepping the Capocollo for its flavorful 24-hour seasoning. The offcuts from the Copocollo process will seamlessly transition into the creation of delicious sausages.

Day 2: A brief, power-packed hour to perfect your creations and unlock the secrets behind this savoury delicacy.

In this intimate, hands-on workshop attendees will learn how to make spicy and mild Italian sausages, try Luigi’s salami, sample seasoned pork loin and bring home your homemade sausages.

Bring an apron, a clean container, and your appetite! Feel free to bring your own bottle of wine if you'd like!

The workshop will take place on December 11th from 6:00 - 10:00 pm in the Italian Cultural Centre's Trattoria.
